Jump to Recipe

Tartufo di Pizzo is a hand-molded gelato truffle from Pizzo, a seaside town in Calabria, built from hazelnut and chocolate gelato around a soft chocolate center and rolled in cocoa. This version uses good store-bought gelato, so the work is shaping and freezing, not churning.

You’ll make a small ganache, freeze it into six balls, and wrap each one in two layers of gelato using a muffin tin as a mold. The truffles freeze for 2 hours, then get rolled in cocoa and twisted into wax paper, the way they’re sold in Pizzo.

In Pizzo the heart is a liquid chocolate sauce. At home, a ganache with a little honey stays fudgy at freezer temperature and softens to a slow flow after about 5 minutes on the counter. That’s the texture to aim for.

Active time is about 45 minutes. The rest is freezer time, which makes this a dessert you can finish days before guests arrive.

Why You’ll Love This Recipe

  • Uses store-bought gelato, so no ice cream machine is needed
  • About 45 minutes of hands-on work, then the freezer takes over
  • Soft chocolate center against a firm hazelnut and chocolate shell
  • Wrapped truffles keep 10 to 14 days, ready for dessert

Ingredient Notes

  • hazelnut (nocciola) gelato: Pick a tub with hazelnut paste high on the ingredient list. It should look pale brown and taste clearly nutty, not sweet and vague.
  • dark chocolate gelato: Choose a dense one labeled fondente if you can find it. Airy, whipped tubs slump while you shape the shells.
  • 70% dark chocolate: Chop it small so it melts evenly in the hot cream. Milk chocolate works, but the center turns sweeter and softer.
  • honey: A small amount keeps the ganache from freezing rock hard. Light corn syrup or glucose syrup works the same way.
  • unsweetened cocoa powder: Use plain cocoa, not drinking chocolate. Sift it so the coating goes on thin and even.

Ingredients

Chocolate heart
  • 50 g dark chocolate (70%) finely chopped
  • 50 ml heavy cream
  • 1 tsp honey
  • 1 pinch fine sea salt
Gelato shell and coating
  • 240 g hazelnut (nocciola) gelato 40 g per truffle
  • 240 g dark chocolate gelato 40 g per truffle
  • 4 tbsp unsweetened cocoa powder sifted
  • 6 wax paper squares, 15 cm / 6 inch for wrapping

Method

Make the chocolate heart
  1. Put the chopped chocolate in a small heatproof bowl. Warm the cream with the salt in a 1-quart / 1 L saucepan over medium-low heat for 2 to 3 minutes, until steam rises and tiny bubbles form at the edges. Pour it over the chocolate, wait 1 minute, then stir in the honey until glossy. Pour into a 10 cm / 4-inch ramekin and freeze for 30 minutes, until stiff but still scoopable.
  2. While the ganache chills, tear six 20 cm / 8-inch squares of plastic wrap and press one into each cup of a 6-cup muffin tin, leaving the edges hanging over. Move both tubs of gelato from the freezer to the fridge for 15 minutes, until you can press a spoon into them but they're still cold and not runny.
  3. Scoop the ganache into six portions of about 1 tbsp (18 g) and roll each into a ball with cold hands, dusting your fingers with cocoa if it sticks. Set the balls on a small plate and return them to the freezer.
Shape and freeze the truffles
  1. Press 40 g of hazelnut gelato into each lined cup, pushing it up the sides, and make a small well in the center with the back of a spoon. Set a ganache ball in each well, then cover with 40 g of chocolate gelato and smooth the top. If the gelato turns glossy and runny at any point, return it to the freezer for 20 minutes before continuing, because melted and refrozen gelato turns icy.
  2. Gather the plastic wrap over each cup and twist it closed so the gelato forms a tight ball. Set the wrapped balls back in the tin and freeze for 2 hours at -18 C / 0 F, until solid all the way through.
  3. Sift the cocoa onto a plate. Unwrap one truffle at a time, roll it in the cocoa, and press gently between your palms to smooth the coating. Twist each into a square of wax paper, return it to the freezer, and serve after 5 minutes at room temperature.

Notes

  • Keep the freezer at -18 C / 0 F or colder so the shells set solid.
  • Weigh each gelato layer at 40 g so the six truffles match.
  • Work with the gelato only when it's spoonable but still cold, and keep unused tubs in the freezer.
  • Let each truffle sit 5 minutes at room temperature before serving so the center softens.

Tips for Success

  • Chill the muffin tin and the plate for 10 minutes before assembly so the gelato stays firm while you shape the shells.
  • Weigh each gelato layer at 40 g so all six truffles come out the same size and freeze at the same rate.
  • Smooth the chocolate layer with a spoon dipped in hot water, wiping it dry between cups, for a clean dome.
  • Sift the cocoa through a fine-mesh sieve onto a plate so it coats thinly instead of clumping on the surface.
  • Twist each cocoa-rolled truffle into wax paper before it goes back in the freezer, so the coating doesn’t smear.

Variations

  • Press one toasted whole hazelnut into each ganache ball before freezing for a crunchy surprise at the center.
  • Roll the truffles in 3 tbsp cocoa mixed with 1 tbsp powdered sugar for a softer, less bitter finish.
  • Use pistachio gelato for the outer layer and stir 1/2 tsp instant espresso into the hot cream for the ganache.

Storage and Reheating

Tartufo di Pizzo keeps for 10 to 14 days in the freezer once each truffle is wrapped in wax paper and stored in an airtight container at -18 C / 0 F. Keep the container toward the back, away from the door, where temperature swings cause ice crystals.

This dessert is served frozen and doesn’t reheat. Take a truffle out 5 minutes before serving and let it sit on a plate at room temperature. That softens the center just enough to flow slightly.

A melted truffle can’t be rescued. Refreezing turns the gelato icy and the center grainy, so only unwrap what you’ll eat.

Serving Suggestions

Tartufo di Pizzo is served whole on a small plate with a spoon and a small knife. Unwrap it at the table, then cut it in half so the chocolate center shows.

A small espresso is the usual pairing. A glass of Calabrian passito such as Greco di Bianco also works, and so does a short pour of amaro.

For a dinner party, keep the wrapped truffles in the freezer until the plates are cleared, then set them out for 5 minutes while the coffee is made.

FAQ

How do I know when my tartufo di Pizzo is ready to serve?

Tartufo di Pizzo is ready after 5 minutes at room temperature, when the outside gives slightly under a fingertip and the cocoa looks matte. Cut one open with a warm knife to check. The gelato should hold its shape and the center should look glossy and fudgy. A center that’s still rock hard needs a couple more minutes.

Can I use pistachio or vanilla gelato instead of hazelnut in tartufo di Pizzo?

Yes, pistachio is the closest swap and vanilla works too. The Pizzo original is hazelnut and chocolate, so you’ll lose some of that nutty depth. Keep the weights the same, 240 g per flavor, and choose a dense gelato, since light whipped tubs slump when you press them into the muffin cups.

How long can I freeze tartufo di Pizzo once it’s rolled in cocoa?

Tartufo di Pizzo keeps for 10 to 14 days in the freezer once it’s wrapped in wax paper and stored in an airtight container. After that, the gelato picks up freezer odors and the cocoa turns damp. Don’t refreeze a truffle that has sat out past the 5-minute serving rest, because it turns icy.

What do you serve with tartufo di Pizzo after dinner?

Serve it with a small espresso, or a glass of Calabrian passito such as Greco di Bianco. Keep the plate bare otherwise, since the truffle already has two gelato layers and a chocolate center. If you want something tart on the side, a spoonful of amarena cherries in syrup works well.

Is tartufo di Pizzo gluten free, and does it contain nuts?

This tartufo di Pizzo is gluten free as long as your gelato is, so check labels for cookie pieces or wafer swirls. It does contain tree nuts from the hazelnut gelato, plus dairy from the gelato and cream. It isn’t safe for guests with a hazelnut allergy, and the chocolate gelato can carry traces of other nuts too.

What’s the difference between tartufo di Pizzo and other Italian gelato tartufo?

Tartufo di Pizzo pairs hazelnut and chocolate gelato around a liquid chocolate heart, shaped by hand, dusted in cocoa, and wrapped in paper. Other tartufo styles, such as the Roman version, often use a cherry or whole hazelnut at the center and a chocolate coating. The Pizzo truffle is defined by that soft chocolate heart.
