Method
Prep the fruit and dough
- Soak the raisins in the grappa (or dark rum) for 15 minutes, then drain and set aside.
- Warm the milk to about 40 C / 105 F and stir in 1 tsp of the sugar. Sprinkle in the yeast and let it sit for 10 minutes until foamy.
- In a large bowl or stand mixer, whisk the wheat flour, buckwheat flour, and salt together. Make a well and add the yeast mixture, eggs, and remaining sugar.
- Mix until a shaggy dough forms, then knead by hand or with a dough hook for 8 to 10 minutes, adding the softened butter a spoonful at a time, until the dough is smooth and passes the windowpane test.
Fold in the filling and rise
- Add the soaked raisins, chopped figs, walnuts, pine nuts, and orange zest. Knead gently by hand until the fruit and nuts are evenly distributed through the dough.
- Shape into a ball, place in an oiled bowl, cover, and let rise in a warm spot (24 to 26 C / 75 to 79 F) for 60 to 75 minutes, until roughly doubled.
- Turn the dough out, deflate gently, and shape into a round loaf. Transfer to a parchment-lined sheet pan 30 cm / 12-inch. Cover loosely and let rise 45 minutes, until puffy.
Bake and cool
- Heat the oven to 180 C / 350 F. Brush the top of the loaf with warm honey thinned with a teaspoon of water, then score a shallow X across the top with a sharp blade.
- Bake for 40 to 45 minutes, rotating the pan once, until the crust is deep golden and an instant-read thermometer inserted in the center reads 92 C / 198 F.
- Cool on the pan for 10 minutes, then transfer to a wire rack and cool at least 30 minutes before slicing.
Notes
- Weigh the dried fruit; volume measures vary too much for a consistent crumb.
- Toast walnuts and pine nuts before folding in for deeper flavor.
- Check internal temp at 92 C / 198 F rather than relying on crust color alone.
- Loaf actually slices cleaner on day two, once the crumb settles.
