  • Pane Carasau Sardinian flatbread or croutons if unavailable
  • 1 lb Pecorino Sardo cheese grated (or a mix of Parmesan and Romano if needed)
  • 4 cups lamb or beef broth
  • A handful of fresh herbs thyme, parsley
  • Salt and pepper to taste

Method
 

  1. Prep the Bread and Cheese: If using Pane Carasau, break it into manageable pieces. If not available, croutons can be a substitute. Grate the Pecorino cheese and set aside.
  2. Soak the Bread: Warm the broth over medium heat. Dip each piece of Pane Carasau or croutons into the broth until softened but not too soggy.
  3. Layer the Ingredients: In a baking dish, start layering the soaked bread, followed by a generous sprinkling of grated Pecorino cheese. Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
  4. Bake: Preheat your oven to 375°F (190°C). Place the baking dish in the oven and bake for about 20–25 minutes or until the cheese is melted and bubbly, and the top is golden.
  5. Garnish and Serve: Remove from the oven, garnish with fresh herbs, and serve hot. Enjoy the rich, comforting flavors of this traditional Sardinian dish.

Notes

For a gluten-free option, use gluten-free croutons or bread.
For a different twist, add a sprinkle of garlic powder or a dash of paprika to the layers for extra flavor.
You can use homemade or store-bought broth, but a rich, flavorful broth makes a big difference.
