Method
 

  1. Slice the zucchini into thin, even rounds (about 1/4 inch thick).
  2. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs or panko.
  3. Dip each zucchini slice into flour, then eggs, and finally breadcrumbs, ensuring it’s well-coated.
  4. Heat cooking oil to 350°F. Fry zucchini slices in small batches until golden brown, about 3–4 minutes per batch. Drain on paper towels.

Notes

For a gluten-free option, use gluten-free breadcrumbs or crushed rice crackers. For a healthier version, bake the zucchini slices at 400°F for 20–25 minutes, flipping halfway through. You can also use almond flour or crushed pork rinds for a low-carb option.
