Sweet Italian Pan-Fried Apple Raisin Grappa Fritters

Diced apple and grappa-soaked raisins fried in a light egg batter, dusted with sugar while warm.

Ingredients
  

For the fruit
  • 2 apples medium (about 300 g); peeled, diced small (1 cm)
  • 75 g raisins
  • 3 tbsp grappa
For the batter
  • 200 g all-purpose flour
  • 50 g granulated sugar
  • 1.5 tsp baking powder
  • 1 pinch salt
  • 2 eggs large
  • 120 ml whole milk
  • 1 tsp lemon zest optional
For frying and finishing
  • 500 ml vegetable oil for frying, neutral, high smoke point
  • 20 g powdered sugar for dusting

Method
 

Soak and prep
  1. Combine the raisins and grappa in a small bowl. Let them soak for at least 15 minutes, until plump.
  2. Peel and dice the apples into 1 cm pieces while the raisins soak.
Make the batter
  1. Whisk the flour, sugar, baking powder, and salt together in a large mixing bowl.
  2. In a separate bowl, whisk the eggs and milk together, then pour into the dry ingredients and stir until just combined. The batter should be thick, like a pancake batter that barely drops off a spoon.
  3. Fold in the diced apple, the soaked raisins along with any leftover grappa, and the lemon zest if using.
Fry and finish
  1. Pour the oil into a 26 cm / 10-inch heavy-bottomed skillet to a depth of about 3 cm. Heat to 175 C / 350 F, checking with a thermometer.
  2. Drop tablespoons of batter into the oil in batches of 4 to 5, leaving space between each so they cook evenly and the oil temperature doesn't drop.
  3. Fry for 2 to 3 minutes per side, until deep golden brown and cooked through in the center.
  4. Lift fritters out with a slotted spoon and set on a wire rack over paper towels to drain. Let the oil come back to 175 C / 350 F between batches.
  5. Let fritters cool 2 to 3 minutes, then dust generously with powdered sugar. Serve warm.

Notes

  • Soak raisins at least 15 minutes, longer if you have time
  • Keep oil at 175 C / 350 F, checking between batches
  • Fry in small batches of 4 to 5 so oil temp doesn't drop
  • Dust with sugar only after fritters cool 2 to 3 minutes
