Ingredients
  

  • 6 –8 cleaned squid tubes
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • ½ cup breadcrumbs
  • 2 tablespoons olive oil
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

  1. Mix breadcrumbs, Parmesan, parsley, garlic, and lemon juice. Season with salt and pepper.
  2. Fill squid tubes with mixture, leaving space at the top. Secure with toothpicks.
  3. Heat olive oil in a pan. Sear stuffed squid 3–4 minutes per side until golden brown.
  4. Remove toothpicks. Garnish with parsley and lemon juice. Serve hot.

Notes

Do not overfill squid tubes, or they may split while cooking. You can add chopped tentacles to the filling for extra flavor. Try baking the squid in tomato sauce for a richer variation. Best served immediately while hot and tender.
