- Prepare the Strawberries: Slice 2 cups of fresh strawberries and sprinkle them with 1/4 cup of sugar. Let them sit for 15 minutes to release their juices.
- Make the Mascarpone Filling: In a mixing bowl, blend 1 cup of mascarpone cheese until smooth. In a separate bowl, whip 1 cup of heavy cream with 1/2 cup of powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form. Gently fold the whipped cream into the mascarpone cheese.
- Layering the Tiramisu: Dip each ladyfinger into 1/2 cup of strawberry juice or coffee and layer them in a dish. Spread a layer of mascarpone filling over the ladyfingers. Add a layer of sliced strawberries. Repeat the layers until you run out of ingredients, ending with a layer of mascarpone filling on top.
- Chilling Time: Cover the dish and refrigerate for at least 4 hours or overnight to let the flavors meld and the tiramisu to firm up.
- Garnish and Serve: Before serving, dust the top with cocoa powder. Garnish with additional fresh strawberries if desired.
