Simmered Ciambotta Calabrese Summer Vegetable Stew

A Calabrian one-pot vegetable stew of eggplant, zucchini, peppers, and potatoes, simmered until thick and spoonable.

Ingredients
  

  • 80 ml extra virgin olive oil divided
  • 1 yellow onion medium; thinly sliced
  • 3 cloves garlic thinly sliced
  • 1 stalk celery sliced
  • 350 g Yukon gold potatoes peeled, cut into 2cm cubes
  • 400 g eggplant cut into 2cm cubes
  • 400 g zucchini about 2 medium, cut into 2cm chunks
  • 1 red bell pepper (about 150 g); sliced into strips
  • 1 yellow bell pepper (about 150 g); sliced into strips
  • 400 g ripe tomatoes chopped, or 1 can whole peeled tomatoes
  • 120 ml water or vegetable broth
  • fine sea salt to taste
  • black pepper to taste
  • 1/2 tsp red pepper flakes optional
  • fresh basil leaves a handful; torn

Method
 

Prep the Vegetables
  1. Cut the eggplant into 2cm cubes, place in a colander set over a bowl, and toss with 1 tsp salt. Let drain 20 minutes, then pat dry with a clean towel.
  2. While the eggplant drains, cut the potatoes, zucchini, peppers, celery, onion, and tomatoes into similarly sized pieces so everything cooks evenly.
Build the Stew
  1. Heat 3 tbsp of the olive oil in a 5-quart / 4.7L Dutch oven over medium heat. Add the onion and celery and cook 5 to 6 minutes, stirring, until soft and translucent.
  2. Add the garlic and cook for 1 minute until fragrant.
  3. Add the potatoes and cook for 5 minutes, stirring occasionally, until the edges start to soften.
  4. Add the drained eggplant, zucchini, bell peppers, and the remaining olive oil. Season with salt, black pepper, and red pepper flakes if using, and stir to coat.
  5. Add the tomatoes and the water or broth. Bring to a gentle simmer, cover, reduce the heat to low, and cook for 25 to 30 minutes, stirring every 10 minutes, until the potatoes are fork-tender and the vegetables have softened but still hold their shape.
  6. Uncover and simmer 5 to 8 minutes more if the stew looks thin, letting the liquid reduce until it coats the back of a spoon.
  7. Remove from the heat, stir in the torn basil, and taste for salt. Serve warm, or let cool and serve at room temperature.

Notes

  • Salt eggplant 20 minutes before cooking, don't skip this step
  • Cut vegetables to a matching 2cm size for even cooking
  • Add basil off heat, not during the simmer
  • Stew thickens more as it cools, account for that when serving
