- Preheat the Oven: Set your oven to 400°F (200°C).
- Season Potatoes: In a large bowl, mix diced potatoes and sweet potatoes. Add olive oil, salt, pepper, garlic powder, and oregano. Toss to coat.
- Bake: Spread evenly on a parchment-lined baking sheet. Bake for 25–30 minutes, tossing halfway through.
- Add Cheese: Sprinkle mozzarella over potatoes. Return to oven for 5–7 minutes, until melted and bubbly.
- Serve: Garnish with fresh parsley and serve hot.
Notes
Use both Yukon Gold and sweet potatoes for a balance of savory and sweet flavor. For extra crispiness, broil for the last 2 minutes after cheese melts. Add a pinch of crushed red pepper for a little heat.
