- Prepare the Batter: In a saucepan, combine chickpea flour, water, olive oil, salt, pepper, parsley, and garlic powder. Whisk until smooth and well-combined.
- Cook the Mixture: Heat the mixture over medium heat, stirring constantly until it thickens (about 5-7 minutes). Once thickened, pour it into a greased baking dish, spreading it evenly.
- Cool and Cut: Let the mixture cool completely, then cut it into squares or your desired shapes.
- Fry the Fritters: Heat vegetable oil in a deep frying pan over medium heat. Fry the fritters in batches for 3-4 minutes per side, until golden brown and crispy.
- Drain and Serve: Remove fritters from the oil and drain on paper towels. Serve hot with lemon wedges or your favorite dipping sauce.
Notes
Panelle are best served hot with a squeeze of lemon or dipped in your favorite sauce (tahini or marinara works great!). Be sure to use chickpea flour (also known as gram flour), as it’s essential for achieving the right texture. You can experiment with adding additional herbs like thyme or basil for extra flavor.
