- Prepare the Mushrooms:
- Clean the mushrooms with a damp paper towel.
- Remove the stems and finely chop them. Set aside the caps.
- Make the Filling:
- In a mixing bowl, combine breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, and chopped mushroom stems.
- Add 2 tablespoons of olive oil, salt, and pepper to taste. Mix well.
- Stuff the Mushrooms:
- Preheat your oven to 375°F (190°C).
- Spoon the filling into the mushroom caps, pressing it down gently.
- Bake:
- Place the stuffed mushrooms on a baking sheet lined with parchment paper.
- Drizzle the remaining olive oil over the top.
- Bake for 20 minutes or until the mushrooms are tender and the filling is golden brown.
Notes
For extra flavor, add a splash of dry white wine to the filling mixture.
