Ingredients
  

  • 16 large button or cremini mushrooms
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic minced
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup finely chopped mushroom stems
  • 3 tablespoons olive oil divided
  • Salt and pepper to taste

Instructions
 

  • Prepare the Mushrooms:
  • Clean the mushrooms with a damp paper towel.
  • Remove the stems and finely chop them. Set aside the caps.
  • Make the Filling:
  • In a mixing bowl, combine breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, and chopped mushroom stems.
  • Add 2 tablespoons of olive oil, salt, and pepper to taste. Mix well.
  • Stuff the Mushrooms:
  • Preheat your oven to 375°F (190°C).
  • Spoon the filling into the mushroom caps, pressing it down gently.
  • Bake:
  • Place the stuffed mushrooms on a baking sheet lined with parchment paper.
  • Drizzle the remaining olive oil over the top.
  • Bake for 20 minutes or until the mushrooms are tender and the filling is golden brown.

Notes

For extra flavor, add a splash of dry white wine to the filling mixture.
You can also sprinkle chopped walnuts or pine nuts on top before baking for added crunch.
