Gelo di Melone: Creamy Sicilian Watermelon Pudding

Sicilian watermelon juice simmered with sugar and cornstarch into a silky chilled pudding, topped with chocolate chips and pistachios.

Ingredients
  

  • 1.5 kg watermelon flesh, seeds removed cut into chunks
  • 100 g granulated sugar adjust to taste
  • 75 g cornstarch
  • 1 cinnamon stick or 1/4 tsp ground cinnamon
  • 1 pinch fine salt
For topping
  • 30 g dark chocolate chips or chopped chocolate bar
  • 20 g shelled pistachios chopped
  • 1/4 tsp ground cinnamon optional, for dusting

Method
 

Make the watermelon juice
  1. Blend the watermelon chunks in batches until smooth.
  2. Strain the puree through a fine-mesh sieve into a bowl, pressing the pulp with a spoon to get all the juice out. Discard the pulp. You should have about 900 ml of juice.
Cook and chill the pudding
  1. In a 3-quart / 2.8 L saucepan, whisk the cornstarch, sugar, and salt together, then whisk in about 200 ml of the cold watermelon juice until completely smooth with no lumps.
  2. Add the rest of the watermelon juice and the cinnamon stick. Set the pan over medium heat.
  3. Cook, whisking constantly, until the mixture reaches a gentle simmer around 90 C / 194 F and thickens enough to coat the back of a spoon, about 8 to 10 minutes.
  4. Remove the cinnamon stick and take the pan off the heat.
  5. Pour the warm mixture into 6 serving cups or ramekins, about 180 ml each.
  6. Let the cups cool at room temperature, uncovered, for 20 minutes.
  7. Cover and chill for at least 4 hours, or overnight, until fully set.
  8. Before serving, top each cup with chocolate chips, chopped pistachios, and a light dusting of cinnamon if using.

Notes

  • Strain the blended watermelon well, seeds and pulp make the texture grainy.
  • Whisk constantly once the pan is on the heat, cornstarch scorches fast if left alone.
  • Chill at least 4 hours, overnight gives the cleanest set for slicing or scooping.
  • Add toppings just before serving so pistachios stay crunchy against the soft pudding.
