Ingredients
  

  • 1 pound Montasio cheese or substitute with Asiago or Parmesan
  • 4 medium Yukon Gold or Russet potatoes peeled and thinly sliced
  • 1 medium onion diced
  • 1 tablespoon extra virgin olive oil
  • Salt to taste

Instructions
 

  • Prep the ingredients: Grate the Montasio cheese. Peel and thinly slice the potatoes. Dice the onion.
  • Sauté the onions and potatoes: Heat a nonstick skillet over medium heat. Add olive oil and sauté the diced onions and potato slices until they become soft and golden.
  • Add the cheese: Gradually stir in the grated cheese, making sure it melts evenly into the potato mixture.
  • Form and crisp: Press the mixture into a pancake shape and let it cook for about 5-7 minutes without stirring, allowing one side to become crispy.
  • Flip and finish: Carefully flip the Frico and cook the other side for another 5 minutes, until both sides are crispy and golden brown.
  • Serve and enjoy! Serve hot with a light salad or your favorite side dish.

Notes

Use a nonstick skillet to make flipping the Frico easier and ensure even crisping.
Montasio cheese is traditional, but Asiago or Parmesan can be used if it's hard to find.
You can add herbs like thyme or black pepper to enhance the flavor without overpowering the dish.
