Classic Cynar Spritz with Prosecco and Orange

A bittersweet Italian aperitivo built from Cynar, chilled prosecco, and soda water, poured over ice and garnished with orange.

Ingredients
  

  • 60 ml Cynar (2 oz); artichoke-based Italian liqueur
  • 90 ml Prosecco (3 oz); chilled, dry brut
  • 30 ml Soda water (1 oz); chilled
  • 1 Ice cubes full glass
  • 1 Orange slice for garnish
  • 1 Fresh mint sprig , optional; for garnish

Method
 

  1. Chill your wine glass or spritz glass in the freezer for 5 minutes, or fill it with cold water while you gather everything else.
  2. Fill the chilled glass with ice cubes right to the rim.
  3. Measure 60 ml / 2 oz Cynar and pour it directly over the ice.
  4. Add 90 ml / 3 oz chilled prosecco, pouring slowly down the inside of the glass to keep the bubbles.
  5. Top with 30 ml / 1 oz chilled soda water.
  6. Stir once, gently, with a bar spoon to combine without knocking out the fizz.
  7. Slide in an orange slice and a mint sprig if using. Serve right away while it's cold and lively.

Notes

  • Stick to the 2:3:1 ratio the first time before adjusting to your own taste
  • Use a dry, brut prosecco or the drink turns too sweet
  • Pour prosecco slowly down the glass wall to protect the bubbles
  • Batch Cynar and prosecco ahead, but add soda water fresh per glass
