Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion sliced
  • 2 bell peppers red and yellow, sliced
  • 1/2 cup pepperoncini sliced
  • 2 tablespoons capers rinsed
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Sauté for about 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken and set aside.
  • In the same skillet, add the sliced onion and bell peppers. Sauté for 4-5 minutes until soft.
  • Stir in the pepperoncini, capers, oregano, and red pepper flakes (if using). Cook for another 2 minutes to combine the flavors.
  • Return the chicken to the skillet and nestle it among the peppers. Cook for 2-3 minutes to heat through and allow the flavors to meld.
  • Garnish with fresh parsley before serving.

Notes

Serve with crusty bread, pasta, or a light salad for a complete meal. Adjust the spice level by adding more or less red pepper flakes. For extra richness, stir in a splash of white wine or balsamic vinegar before returning the chicken to the skillet.
