Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 ripe avocados sliced
  • 8 oz fresh mozzarella sliced
  • 2 cups fresh basil leaves
  • 2 large ripe tomatoes sliced
  • 4 cups mixed leafy greens
  • ¼ cup balsamic glaze
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste

Instructions
 

  • Marinate the Chicken:
  • In a bowl, mix olive oil, lemon juice, garlic, Italian herbs, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 2 hours.
  • Grill the Chicken:
  • Preheat your grill to medium-high. Grill the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked. Let the chicken rest for a few minutes before slicing it into strips.
  • Prepare the Salad Base:
  • On a large platter or salad bowl, arrange the mixed leafy greens as the base.
  • Assemble the Salad:
  • Add the grilled chicken strips on top of the greens. Arrange the avocado slices, mozzarella, and tomato slices around the chicken. Scatter fresh basil leaves over the salad.
  • Drizzle and Serve:
  • Drizzle the balsamic glaze over the salad. Serve immediately and enjoy!

Notes

For the best flavor, use ripe avocados and fresh mozzarella.
You can make your own balsamic glaze by reducing balsamic vinegar with a bit of sugar over low heat until thickened.
