  • 12 ounces spaghetti
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1 cup freshly grated Parmigiano-Reggiano cheese
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley or chives chopped (for garnish)
  • Optional: pinch of nutmeg

Method
 

  1. Cook the Pasta: Boil a large pot of salted water. Add the spaghetti and cook until al dente according to package instructions. Drain, reserving a cup of pasta water.
  2. Prepare the Sauce Base: In a large skillet over medium heat, melt the butter. Add the heavy cream and cook, stirring occasionally, until it starts to thicken.
  3. Add Cheese: Gradually stir in the Parmesan cheese until it melts smoothly into the sauce.
  4. Combine Pasta and Sauce: Toss the cooked spaghetti in the skillet with the sauce. Add reserved pasta water a little at a time to reach your desired consistency.
  5. Season: Season with salt, pepper, and a pinch of nutmeg if desired.
  6. Serve: Garnish with freshly chopped parsley or chives and serve immediately.

Notes

Use high-quality butter and Parmesan cheese for the best flavor.
If the sauce thickens too much, add more reserved pasta water to adjust the consistency.
