Ingredients
  

  • 6 oz 170g dark chocolate (70% cocoa)
  • 3 tbsp unsalted butter
  • 1/4 cup 60ml heavy whipping cream, chilled
  • 3 large eggs separated (fresh eggs are recommended)
  • 1/4 cup granulated sugar
  • 1/4 cup amaretto liqueur DiSaronno recommended
  • A pinch of salt
  • Optional: dark chocolate shavings toasted almonds, liqueur-spiked whipped cream

Method
 

Prepare Ingredients: Break the chocolate into small pieces and place it with butter in a microwave-safe bowl.
    Melt Chocolate: Microwave in 20-second bursts, stirring in between until fully melted, or use a double boiler method.
      Whisk Egg Yolks and Sugar: In a heatproof bowl, whisk together egg yolks and granulated sugar. Place over simmering water (double boiler) and whisk constantly until thickened and reaches 160°F.
        Add Amaretto: Remove the yolk mixture from heat and whisk in amaretto.
          Whip Egg Whites: In a large bowl, beat egg whites with a pinch of salt until stiff peaks form.
            Combine Mixtures: Fold the melted chocolate mixture into the egg yolks. Then gently fold in the whipped egg whites using a cutting and folding motion.
              Chill the Mousse: Spoon the mousse into ramekins or a serving bowl. Cover with plastic wrap and chill for at least 4 hours to set properly.
                Serve: Garnish with whipped cream, dark chocolate shavings, and toasted almonds before serving.

                  Notes

                  • You can substitute the amaretto with almond extract or cold coffee for a non-alcoholic version.
                  • The mousse should be made ahead to allow it to properly set, which also enhances the flavors.
                  • Serve in individual ramekins for an elegant touch or in a single bowl for a more casual presentation.
